“Only good mothers worry about being bad mothers”
This is a recipe I altered sightly to make it easier and also not as spicy. I have a very low threshold for spicy foods, so I steer far clear. My guys really love Sunday night LaLa Enchiladas!
Here are the ingredients.
10 small flour Tortillas (warmed)
Medium size can of mild enchilada sauce.
2 Tbs ketchup
2 Tbs BBQ sauce
Medium size can of vegetarian refried beans (heated for 2 minutes in microwave)
1 large grilled chicken breast
2 cups mexican style shredded cheese
Large baking dish
2 teaspoons
Pre heat oven to 400 degrees
Combine enchilada sauce, ketchup and BBQ sauce, stir.
Hold tortilla in one hand
Smooth 1 teaspoon of sauce on tortilla
Put on heaping teaspoon of refried beans on tortilla
Add a small amount of shredded chicken breast pieces (leave this part out to make vegetarian)
Top with cheese
Roll tortilla up
place in the pan
Repeat using all of the tortillas, chicken and beans
Pour a little of the enchilada sauce on each one and top with cheese

Bake for 20 minutes
Let cool for at least 5 minutes
Top with a serving of sour cream
Enjoy!
